Soak the Catfish
In a large bowl, combine the buttermilk and hot sauce. Add the catfish fillets and ensure they are fully submerged. Cover and refrigerate for at least 30 minutes.

In a separate bowl, mix together the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper until well combined.
Frying
Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Bread the Catfish
Remove the catfish from the buttermilk mixture, allowing excess to drip off. Dredge each fillet in the breading mixture, pressing down to ensure an even coating.
Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, cooking them in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove and drain on paper towels.

Plate and Serve
Serve the crispy fried catfish hot with lemon wedges and tartar sauce on the side for dipping.
