    Marinate the Catfish

    In a large bowl, combine buttermilk and hot sauce. Add the catfish fillets, ensuring they are fully submerged. Cover and refrigerate for at least 30 minutes.

    In a separate bowl, mix together the flour, cornmeal, salt, black pepper, garlic powder, onion powder, and cayenne pepper. This will be the coating for the catfish.

    Heat the Oil

    In a large, deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Coat and Fry the Catfish

    Remove catfish from the marinade, allowing excess to drip off. Dredge each fillet in the flour-cornmeal mixture, pressing gently to adhere. Carefully place the coated fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the potatoes and cut them into fries. Rinse them in cold water to remove excess starch, then pat dry with a paper towel.

    Once the oil is hot, carefully add the potato fries in batches to avoid overcrowding. Fry them for about 5-7 minutes or until golden and crispy. Remove them from the oil and drain on paper towels. Season with salt while hot.
