Method
Preparing Calamari
Clean and Prepare Calamari
If using whole calamari, clean and slice into rings. Rinse under cold water and pat dry with paper towels.
Marinate Calamari
Place cleaned calamari rings in a bowl and pour in the buttermilk. Let it marinate for at least 30 minutes in the refrigerator.
Coating and Frying
Prepare Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.
Heat Oil
In a deep pot or fryer, heat vegetable oil to 375°F (190°C).
Coat Calamari
Remove the marinated calamari from the refrigerator. Dredge each ring in the flour mixture, ensuring they are fully coated.
Fry Calamari
Carefully drop the coated calamari rings into the hot oil in batches. Fry for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.
Making Marinara Sauce
Finish Sauce
Stir in fresh basil and remove from heat. Serve warm.
Serving
Plate and Serve
Serve the fried calamari hot with a side of homemade marinara sauce for dipping.
