Method

Crab Preparation

  1. 1

    Prepare the Water

In a large pot, fill with 4 liters of water and add 3 tablespoons of salt. Bring the water to a rolling boil over high heat.

  2. 2

    Cook the Crab

Once the water is boiling, carefully add the whole Dungeness crabs, ensuring they are fully submerged. Cover the pot with a lid and cook for 10-12 minutes.

  3. 3

    Cool the Crab

After cooking, remove the crabs from the pot and place them in an ice bath (a bowl filled with ice and water) to stop the cooking process. Let them cool for about 5 minutes.

  4. 4

    Crack the Crab

Once cooled, use a crab cracker or mallet to crack the shells of the crabs to make the meat easier to access.

Dipping Sauce

  1. 5

    Melt the Butter

In a small saucepan over medium heat, melt 1 cup of unsalted butter until it is fully melted and bubbling.

  2. 6

    Add Garlic

Mince the 3 cloves of garlic and add to the melted butter. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

  3. 7

Mix in Lemon Juice and Parsley

Remove the saucepan from heat and stir in 2 tablespoons of lemon juice and 2 tablespoons of chopped fresh parsley. Season with black pepper to taste.

  4. 8

    Serve

Serve the cooked Dungeness crab with the warm garlic butter dipping sauce on the side.
