Prepare the Mixture
In a large mixing bowl, combine the fresh lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, and egg. Gently fold the mixture to avoid breaking up the crab meat.

Add the Fillers
Add the bread crumbs and chopped green onions to the crab mixture. Season with salt and black pepper to taste. Gently mix until just combined.

Chill the Mixture
Cover the bowl with plastic wrap and refrigerate the crab mixture for at least 30 minutes to help it firm up.

Form the Cakes
Once chilled, take the mixture and form it into patties, about 1 inch thick and 3 inches in diameter.

Remoulade Sauce Preparation

Combine Ingredients
In a small bowl, mix together the mayonnaise, Dijon mustard, chopped capers, lemon juice, and paprika. Stir until well combined.

Adjust Seasoning
Add hot sauce to taste, and adjust seasoning as necessary. Refrigerate until ready to serve.
