Cooking Pasta

    Boil the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually around 8-10 minutes.

    Reserve Pasta Water

    Before draining the spaghetti, reserve about 1 cup of the pasta cooking water. This will be used to adjust the sauce later.

    Drain the Pasta

    Drain the spaghetti and set aside. Do not rinse, as you want to keep the starch that will help the sauce adhere.

Preparing the Sauce

    Cook the Pancetta

    In a large skillet over medium heat, add the diced pancetta. Cook until crispy, about 5-7 minutes. Remove from heat and set aside.

    Mix Eggs and Cheese

    In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Pancetta

    Return the skillet with pancetta to low heat. Add the drained spaghetti and toss to combine, ensuring the pasta is coated with the pancetta fat.

    Add Egg Mixture

    Remove the skillet from heat and quickly pour the egg and cheese mixture over the spaghetti. Toss quickly to ensure the eggs cook gently and form a creamy sauce. Add reserved pasta water as needed to reach desired consistency.

    Taste and season with salt and additional pepper if needed. Serve immediately, garnished with chopped parsley.
