    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Stir in the minced garlic, dried thyme, salt, and black pepper. Cook for an additional 2 minutes until fragrant.

    Add the Broth and Tomatoes

    Pour in the vegetable broth and add the canned diced tomatoes along with their juice. Add the bay leaf, and stir well to combine.

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15 minutes.

    After 15 minutes, add the diced zucchini, green beans, and chopped spinach to the pot. Stir and let it simmer uncovered for an additional 10 minutes, or until the vegetables are tender.
