Preparation of Base

    Heat the Milk and Cream

    In a medium saucepan, combine the milk and heavy cream. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Temper the Egg Mixture

    Slowly pour about a cup of the warm milk mixture into the egg yolk mixture while whisking constantly. This will temper the eggs and prevent them from scrambling.

    Combine Mixtures

    Pour the tempered egg mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5-7 minutes.

    Remove from heat and stir in the vanilla extract. Allow the mixture to cool to room temperature, then refrigerate until cold, at least 2 hours.

    Once the base mixture is cold, divide it into portions if making multiple flavors.

    For chocolate gelato, whisk in the cocoa powder until fully combined.

    For strawberry gelato, fold in the pureed strawberries until well mixed.

    Add Chopped Pistachios for Pistachio Gelato

    For pistachio gelato, fold in the chopped pistachios to incorporate.

    For coffee gelato, mix in the brewed coffee until fully blended.

Churning and Freezing

    Churn the Gelato

    Pour the flavored mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Transfer the churned gelato to an airtight container and freeze for at least 4 hours or until firm.
