    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels. This helps to remove excess moisture, which is essential for achieving crispiness.

    Set Up Breading Station

    In a shallow dish, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another shallow dish, beat the eggs. In a third shallow dish, place the breadcrumbs.

    Bread the Calamari

    Dredge each calamari ring first in the flour mixture, shaking off any excess, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Make sure each piece is evenly coated.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately.

    Fry the Calamari

    Working in batches, add the breaded calamari rings to the hot oil. Fry for about 2-3 minutes or until they are golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

    In a bowl, combine the mayonnaise, minced garlic cloves, lemon juice, and hot sauce. Mix well until smooth and creamy.
