Crust Preparation

    Preheat Oven

    Preheat your oven to 325°F (163°C).

    Mix Crust Ingredients

    In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust.

    Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes until set. Remove and let cool while preparing the filling.

Filling Preparation

    Prepare Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

    Add Sugar and Vanilla

    Gradually add granulated sugar and vanilla extract, mixing until well incorporated.

    Incorporate Sour Cream

    Add in sour cream and mix until smooth and creamy.

    Add Eggs

    Add the eggs one at a time, mixing on low speed until just combined. Be careful not to overmix.

    Pour Filling into Crust

    Pour the filling into the cooled crust, spreading it evenly.

    Bake the Cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for about 1 hour.

    Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.

Strawberry Sauce Preparation

    Cook Strawberries

    In a medium saucepan, combine the fresh strawberries, granulated sugar, and lemon juice.

    Cook over medium heat for about 10 minutes until the strawberries soften and the mixture thickens slightly. Stir occasionally.

    Remove from heat and let cool before serving.
