Brisket Preparation

    Prepare the Brisket

    Start by trimming excess fat from the brisket, leaving about 1/4 inch for flavor. Rinse the brisket under cold water and pat dry with paper towels.

    Season the Brisket

    In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this seasoning mix all over the brisket, ensuring it’s well coated.

    Add Liquid Smoke

    Drizzle the liquid smoke over the seasoned brisket and rub it in. This will enhance the smoky flavor.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 10-12 hours, or until the internal temperature reaches 195°F (90°C).

    Rest the Brisket

    Once cooked, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    Prepare Beef Broth

    While the brisket is resting, heat the beef broth in a small saucepan over medium heat until warm.

    Make the BBQ Sauce

    In a saucepan, combine ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, garlic powder, salt, and black pepper. Stir well and simmer over low heat for about 15 minutes, allowing the flavors to meld.

    Slice the Brisket

    After resting, slice the brisket against the grain into thin slices.

    Toast the Buns

    Toast the buns on a grill or in a toaster until golden brown.

    Assemble the Sandwich

    On each toasted bun, layer sliced brisket, drizzle with BBQ sauce, add pickles, and top with sliced onion. Close the sandwich with the other half of the bun.
