Method

Preparing the Calamari

    Clean and Prepare Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Prepare Breading Station

    In a shallow bowl, mix the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. In another bowl, beat the eggs. In a third bowl, place the panko bread crumbs.

Breading the Calamari

    Coat the Calamari

    Dredge each calamari ring in the flour mixture, shaking off the excess. Dip into the beaten eggs, then coat with panko bread crumbs, pressing gently to adhere.

Frying the Calamari

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Calamari

    Fry the calamari in batches for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Keep warm in an oven set to low heat.

Making the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Simmer Sauce

    Add the crushed tomatoes, oregano, salt, black pepper, and sugar. Stir and let simmer for 15-20 minutes, stirring occasionally. Stir in the chopped basil just before serving.

Making the Lemon Aioli

    Combine Ingredients

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix until smooth and well combined.
