Muddle Mint and Lime
In a sturdy glass or cocktail shaker, add the fresh mint leaves and the fresh lime juice. Use a muddler or the back of a spoon to gently press down on the mint leaves to release their essential oils and mix with the lime juice. Avoid tearing the leaves too much.

Add Simple Syrup
Pour in the simple syrup over the muddled mint and lime mixture. This will add sweetness to balance the tartness of the lime.

Add Rum
Next, add the white rum to the glass or shaker, combining it with the muddled mixture.

Mix with Ice
Fill the glass or shaker with ice cubes (about 1 cup) and stir gently to combine all the ingredients together. If using a shaker, you can shake it lightly.

Top with Soda Water
Pour the soda water over the mixture, filling the glass to the top. This will give the mojito its refreshing bubbly quality.

Garnish with a lime wedge and a sprig of mint. Serve immediately with a straw or stirrer for easy sipping.
