Salad Preparation

Prepare the Mixed Greens
Rinse the mixed greens under cold water to remove any dirt. Spin or pat dry and place them in a large salad bowl.

Grill the Chicken
Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes. Slice the chicken into strips.

Prepare the Vegetables
Slice the cherry tomatoes in half, chop the cucumber into bite-sized pieces, and thinly slice the red onion.

Add the sliced grilled chicken, cherry tomatoes, cucumber, and red onion to the bowl with the mixed greens. Toss gently to combine.

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
