For the Cheesecake
- 1
Prepare the Cream Cheese Mixture
In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- 2
Add Sugar and Sour Cream
Gradually add the granulated sugar and continue to beat until well combined. Then, mix in the sour cream and vanilla extract until smooth.
- 3
Incorporate Eggs and Dry Ingredients
Add the eggs one at a time, mixing on low speed after each addition. Then, sift together the flour and salt, and gently fold them into the mixture until just combined.
- 4
Pour into Crust
Pour the cheesecake filling over the prepared crust and smooth the top with a spatula.

Cook the Berries
In a medium saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice.
- 9
Simmer
Bring the mixture to a simmer and cook for about 10 minutes, stirring occasionally, until the berries have released their juices and the mixture has thickened slightly.
- 10
Cool the Compote
Remove from heat and let the berry compote cool to room temperature before serving.

Cool and Chill
Turn off the oven, crack the door, and let the cheesecake cool for 1 hour. Remove from the oven and refrigerate for at least 4 hours or overnight.
- 13
