Making the Veggie Patty

Prepare the Beans
In a large bowl, mash the black beans with a fork or a potato masher until mostly smooth, leaving some chunks for texture.

Combine Ingredients
Add fire-roasted red bell pepper, finely chopped onion, minced garlic, cooked quinoa, chopped cilantro, cumin powder, chili powder, salt, black pepper, breadcrumbs, and the egg (or flax egg) into the bowl with the mashed beans. Mix well until combined.

Form Patties
Divide the mixture into two equal portions and shape each portion into a patty.

Chill Patties
Place the patties on a plate, cover, and refrigerate for at least 30 minutes to help them firm up.

Assembling the Burger

Toast Buns
If desired, toast the burger buns on the grill for a minute until golden.

Add Toppings
Spread chipotle mayo on the bottom half of each bun. Place the grilled patty on top, followed by lettuce leaves, tomato slices, and avocado slices. Top with the other half of the bun.
