Bacon

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

    Honey-Peppercorn Glaze

    In the same skillet, add the black peppercorns and honey. Stir to combine and cook for an additional 2-3 minutes until the mixture becomes syrupy. Toss the cooked bacon in the glaze until well-coated.

Blue Cheese Mayo

    Make the Blue Cheese Mayo

    In a mixing bowl, combine the mayonnaise and blue cheese crumbles. Mix well until smooth and creamy. Set aside.

Onion Relish

    Prepare the Onion Relish

    Chop the medium onion finely. Heat olive oil in a small saucepan over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.

    Simmer the Relish

    Add balsamic vinegar, sugar, and salt to the sautéed onions. Stir well and simmer for an additional 3-4 minutes until the mixture thickens slightly. Remove from heat and let cool.

    Cook the Burger Patties

    In the same skillet used for the bacon, cook the burger patties over medium-high heat until cooked to your desired doneness, approximately 4-5 minutes per side.

    Assemble the Burger

    Toast the burger buns lightly if desired. Spread a generous amount of blue cheese mayo on the bottom bun, layer with a cooked burger patty, top with honey-peppercorn bacon, onion relish, and a final sprinkle of blue cheese crumbles. Cap with the top bun.
