Preparation of Pork Strips

    Slice the Pork

    Trim the pork tenderloin of any excess fat and silver skin. Slice it into thin strips, approximately 1 inch wide.

    Season the Strips

    Season the pork strips with salt and black pepper, making sure to coat them evenly.

    Prepare Breading Stations

    Set up three shallow bowls: one with flour, one with beaten eggs, and the last with breadcrumbs. This will be used for breading the pork.

    Bread the Strips

    Dredge each pork strip first in flour, shaking off any excess. Then dip it in the beaten eggs, and finally coat it in breadcrumbs, pressing down gently to adhere.

Cooking the Pork

    Heat the Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Strips

    Add the breaded pork strips in batches to avoid overcrowding. Cook for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

    In a small bowl, combine honey, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper. Mix well until smooth.
