    In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-5 minutes.

    Add Potatoes and Corn

    Stir in the diced potatoes and sweet corn kernels. Cook for an additional 5 minutes, stirring occasionally.

Cooking the Soup

    Add Broth and Seasoning

    Pour in the vegetable broth and add salt, black pepper, and thyme. Bring the mixture to a boil, then reduce the heat to a simmer.

    Let the soup simmer for about 20 minutes, or until the potatoes are tender.

Final Touches

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender.

    Stir in the heavy cream and heat through without boiling. Adjust seasoning if necessary.
