Roasted Anaheim Chicken Sandwich Recipe

Chicken Marinade

    Prepare the Chicken

    In a bowl, combine olive oil, garlic powder, paprika, salt, and black pepper. Add the chicken breasts and coat them evenly with the marinade. Let it marinate for at least 30 minutes.

Roma Chili Pepper Sauce

    Make the Sauce

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add diced Roma tomatoes, cumin, salt, and black pepper. Cook for about 10-15 minutes until the mixture thickens. Stir in lime juice and set aside.

Cook Chicken and Assemble Sandwich

    Cook the Chicken

    Preheat a grill or stovetop grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).

    Roast the Anaheim Peppers

    While the chicken is cooking, roast the Anaheim peppers over an open flame or in the oven until the skin is charred. Remove from heat, let cool, then peel the skin off and slice them open.

    Assemble the Sandwich

    Toast the ciabatta buns until golden brown. Place the grilled chicken on the bottom half of each bun, top with Roma chili pepper sauce, roasted Anaheim peppers, jack cheese, and lettuce leaves. Place the top half of the bun over the sandwich.

    Serve the sandwiches warm, and enjoy! Optionally, you can fry the sandwich for a crispy texture by placing it in a skillet with a bit of oil until golden brown on both sides.
