Prepare the Vegetables
Slice the onion, Anaheim pepper, and red bell pepper into thin strips and set aside.

Cook the Sausage
In a large skillet over medium heat, add the Graziano Italian sausage. Cook until browned and fully cooked, breaking it into smaller pieces as it cooks, about 8-10 minutes.

Add Vegetables
Add the sliced onion, Anaheim pepper, and red bell pepper to the skillet with the sausage. Cook for an additional 5-7 minutes until the vegetables are softened.

Add Marinara Sauce
Pour in the marinara sauce and stir to combine. Let the mixture simmer for about 5 minutes until heated through.

Prepare the Rolls
While the sausage and vegetable mixture is simmering, preheat a grill or grill pan over medium heat. Slice the Italian rolls in half, but do not cut all the way through. Lightly grill the rolls until golden brown.

Stuff the Rolls
Spoon the sausage and vegetable mixture generously into each grilled Italian roll.

Add Provolone Cheese
Top each filled roll with 2 slices of provolone cheese.

Remove the sandwiches from the grill, slice in half if desired, and serve immediately while hot.
