Prepare Cheese Curds
Begin by gathering the fresh cheese curds and placing them in a bowl. If the curds are large, consider breaking them into smaller pieces for easier frying.

Prepare Breading Stations
In one bowl, mix together the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and milk until well combined.
Breading the Cheese Curds

Bread the Curds
Take each cheese curd and first coat it in the flour mixture, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off, and finally coat it again in the flour mixture to create a double breading effect.
Frying

Heat the Oil
In a deep pot or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the breading mixture into it; if it sizzles, it’s ready.

Fry the Curds
Carefully add the breaded cheese curds to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown, turning occasionally for even cooking.

Drain and Serve
Once the cheese curds are golden brown, remove them from the oil using a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately while hot.
