Prepare the Broth
In a medium saucepan, heat the beef broth over medium heat until it is hot but not boiling. Reduce the heat to low to keep it warm while you prepare the sandwiches.

Prepare the Roast Beef
In a skillet over medium heat, add the sliced roast beef. Warm the beef for about 5 minutes or until heated through, stirring occasionally.

Toast the Rolls
While the beef is warming, slice the French rolls in half. If desired, toast them lightly under a broiler until golden brown, about 2-3 minutes.

Assemble the Sandwiches
On the bottom half of each toasted roll, layer the warmed roast beef followed by 2 slices of provolone cheese. If using, add the caramelized onions, sautéed mushrooms, or fried jalapeños on top of the cheese.

Complete the Sandwich
Place the top half of the roll on each assembled sandwich.

Serve with Au Jus
