For the Caramelized Onions

Method

Caramelizing the Onions

  1. 1

    Prepare the Onions

    Slice the onions thinly.

  2. 2

    Cook the Onions

In a large skillet, heat olive oil over medium heat. Add the sliced onions and salt, stirring occasionally.

  3. 3

    Caramelize the Onions

Cook the onions for about 20-25 minutes, or until they are golden brown and caramelized, stirring frequently to prevent burning.

Assembling the Fiesta Melt

  1. 4

    Toast the Bread

While the onions are caramelizing, toast the marble rye bread slices until golden brown.

  2. 5

    Layer the Ingredients

On two slices of the toasted marble rye, layer caramelized onions, followed by a slice of pepper jack cheese, and top with crispy jalapeno peppers.

  3. 6

    Add the Sauce

Drizzle chipotle ranch dressing over the jalapeno peppers.

  4. 7

    Top and Grill

Place the remaining slices of toasted bread on top to form a sandwich. Grill the sandwich in a skillet over medium heat until the cheese is melted and the bread is golden brown, about 3-4 minutes per side.
