Cheesecake Preparation

    Prepare the cheesecake batter

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar and continue to beat until creamy. Mix in the sour cream, vanilla extract, and heavy cream until well combined.

    Add eggs

    Add the eggs one at a time, mixing well after each addition until just combined. Be careful not to overmix.

Graham Cracker Crust Preparation

    Preheat the oven

    Preheat your oven to 325°F (160°C).

    Make the crust

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Baking the Cheesecake

    Combine crust and batter

    Pour the cheesecake batter over the prepared graham cracker crust, smoothing the top with a spatula.

    Bake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Cool and chill

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Strawberry Sauce Preparation

    Prepare the sauce

    In a medium saucepan over medium heat, combine the fresh strawberries, granulated sugar, and lemon juice. Stir occasionally until the strawberries break down and the mixture thickens slightly, about 10-15 minutes.

    Cool the sauce

    Remove from heat and let it cool before serving.

Caramel Topping Preparation

    Make the caramel

    In a small saucepan, combine the granulated sugar and water. Cook over medium heat, swirling the pan occasionally until the sugar dissolves and turns a golden amber color. Remove from the heat.

    Cool the caramel

    Let the caramel sit for a few minutes to thicken before drizzling over the cheesecake.
