Straining Curds

    Place a fine-mesh strainer or cheesecloth over a large bowl. This will catch the curds while allowing the whey to drain.

    Gently pour the curds and whey mixture into the strainer. Let it sit for about 10-15 minutes to drain off excess whey. The curds will clump together as they drain.
