Chicken Fried Chicken

    Prepare the Chicken

    Start by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin.

    Set Up Breading Station

    In three separate bowls, place the flour in the first bowl, beaten eggs mixed with milk in the second bowl, and crushed crackers in the third bowl.

    Bread the Chicken

    Dredge each chicken breast in flour, then dip into the egg mixture, and finally coat with crushed crackers.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken breasts for about 5-7 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.

Gravy

    Make the Roux

    In a saucepan over medium heat, melt 4 tablespoons of the remaining oil from frying. Whisk in 4 tablespoons of flour to create a roux, cooking for 2-3 minutes until lightly browned.

    Add Liquid

    Slowly whisk in chicken broth and milk. Bring to a simmer, stirring constantly until the gravy thickens. Season with salt and pepper.

Yukon Gold Smashed Potatoes

    Boil the Potatoes

    Peel and cut the Yukon Gold potatoes into quarters. Boil in salted water until fork-tender, approximately 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return to the pot. Add butter and milk, then mash until desired consistency. Season with salt and pepper to taste.

Sautéed Corn and Peppers

    Sauté the Vegetables

    In a skillet over medium heat, heat olive oil. Add diced bell peppers and fresh corn kernels. Sauté for about 5-7 minutes until tender. Season with salt and pepper.
