    Prepare the Filling

    In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Vegetables

    Chop the red bell pepper, Anaheim pepper, and onion. Once the beef is browned, add the chopped vegetables to the skillet. Sauté until the vegetables are soft, about 3-5 minutes.

    Add Cheese

    Reduce the heat to low and add the American cheese to the skillet, stirring until melted and combined with the beef and vegetables. Remove from heat and let the mixture cool slightly.

    Assemble Egg Rolls

    Lay a wonton wrapper flat on a clean surface, with one corner pointing towards you. Place a heaping tablespoon of the beef and cheese mixture in the center of the wrapper. Moisten the edges with water and fold the bottom corner over the filling. Fold the sides in and roll tightly to seal the filling inside. Repeat with remaining wrappers and filling.

    Fry the Egg Rolls

    In a deep skillet or fryer, heat oil to 350°F (175°C). Carefully add egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

    Serve with Sauce

    Serve the cheese steak egg rolls warm with honey sriracha sauce for dipping.
