Meatloaf Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Mix Meatloaf Ingredients

    In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and smoked paprika. Mix until well combined.

    Shape the Meatloaf

    Transfer the mixture to a loaf pan and shape it evenly. Press down gently to ensure it holds together.

    Bake the Meatloaf

    Bake in the preheated oven for 60 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes before slicing.

Bourbon BBQ Sauce Preparation

    Combine Sauce Ingredients

    In a saucepan over medium heat, combine ketchup, bourbon, brown sugar, apple cider vinegar, garlic powder, onion powder, salt, black pepper, and smoked paprika.

    Simmer the Sauce

    Bring the mixture to a simmer, stirring occasionally. Let it cook for about 15-20 minutes, or until it thickens slightly.

Sandwich Assembly

    Prepare Bread

    Spread butter on one side of each slice of thick cut white bread.

    Grill the Bread

    In a skillet over medium heat, place the buttered side of the bread down and grill until golden brown, about 3-4 minutes.

    On the grilled side of two slices of bread, layer sliced meatloaf, bourbon BBQ sauce, cheddar cheese, and crispy fried onions. Top with the other slices of bread, grilled side up.
