Salad Preparation

Cook the Chicken
Preheat a grill or skillet over medium heat. Season the chicken breast with salt and pepper. Cook for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for 5 minutes.

Prepare the Saifun Noodles
Bring a pot of water to a boil. Add saifun noodles and cook according to package instructions (usually about 3-5 minutes). Drain and rinse under cold water to stop the cooking process. Set aside.

Chop the Vegetables
While the chicken and noodles are cooking, chop the red bell pepper, carrots, and green onions. For the carrots, you can julienne them or slice them thinly.

Slice the Chicken
Once the chicken has rested, slice it into thin strips.

Combine Salad Ingredients
In a large bowl, combine mixed greens, cooked saifun noodles, sliced chicken, chopped red bell pepper, carrots, and cashews. Toss gently to mix.

Add Wonton Strips
Just before serving, add the wonton strips to the salad for crunch.
Vinaigrette Preparation

Mix the Vinaigrette
In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, chili paste, honey, sesame oil, and water until smooth. Adjust seasoning to taste.

Drizzle the peanut chili vinaigrette over the salad and toss gently to coat all ingredients evenly.
