Cheesecake Preparation

Preheat the Oven
Preheat your oven to 325°F (160°C).

Make the Crust
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and set aside to cool.

Prepare the Cheesecake Filling
In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth and creamy. Add in eggs, one at a time, mixing well after each addition.

Add Vanilla Bean
Scrape the seeds from the vanilla bean pod and add them to the cream cheese mixture. You can also add a teaspoon of vanilla extract for extra flavor.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust and smooth the top with a spatula.

Bake the Cheesecake
Bake the cheesecake for 55-60 minutes or until the center is set but still slightly jiggly.

Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for about an hour. Then refrigerate for at least 4 hours or overnight.
