    Prepare the Quinoa

    Rinse the quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and fluff with a fork.

    Sauté the Onions and Peas

    In a skillet, heat 1 tablespoon of lemon pepper oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the peas and cook for an additional 2 minutes. Remove from heat and combine with the cooked quinoa.

    Prepare the Salmon

    Preheat the grill to medium-high heat. Brush the salmon fillets with the remaining lemon pepper oil, seasoning both sides with salt and black pepper.

    Grill the Salmon

    Place the salmon fillets on the grill, skin-side down. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

    Plate the quinoa mixture and place the grilled salmon on top. Serve with lemon wedges on the side.
