Prepare the Patty

In a bowl, combine the ground brisket with salt and black pepper. Mix gently until combined, being careful not to overwork the meat.

Form the Patties

Divide the meat mixture into two equal portions and shape them into patties about 4 oz each, making a slight indentation in the center.

Cook the Patties

Preheat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side, or until they reach the desired doneness.

Add Cheese

In the last minute of cooking, place a slice of Swiss cheese and a slice of Cheddar cheese on each patty. Cover to melt the cheese.

Toast the Buns

While the cheese is melting, toast the burger buns on the grill or skillet until golden brown.

Assemble the Burger

Place the cooked patties on the bottom half of the toasted buns. Top with lettuce, tomato, ketchup, and mustard. Close the burger with the top half of the bun.

Serve

Serve the cheeseburgers immediately while hot, with your favorite sides.
