Prepare the Lobster

In a pot of boiling salted water, cook the lobster tails for about 5-7 minutes until they are bright red and cooked through. Remove from the water and let cool slightly. Once cool, use kitchen shears to cut the tails open and remove the meat. Skewer each lobster tail with a wooden stick and season with salt and black pepper.

Heat the Butter

In a small saucepan, melt the butter over low heat. Once melted, keep warm for serving.

Prepare the Cornbread Batter

In a bowl, mix together the cornmeal, all-purpose flour, baking powder, sugar, and salt. In a separate bowl, whisk together the milk, egg, and vegetable oil. Combine the wet and dry ingredients until just mixed.

Frying the Lobster

Deep Frying

Heat oil in a deep fryer or large pot to 350°F (175°C). Dip each skewer of lobster tail into the cornbread batter, allowing excess to drip off. Carefully place the battered lobster tails into the hot oil and fry for 3-4 minutes or until golden brown. Remove and drain on paper towels.

Serve the lobster tails warm, either drizzled with melted butter or as deep-fried corn bread pops. Accompany with your choice of dipping sauce and lemon wedges.
