“The Influencer” The ultimate low carb indulgence, a taco shell made of cheese. You may have seen this creation on youtube, or instagram or TV or your grandma’s facebook. This “Happy Accident” quickly became one of the most sought after snacks in all the land, and for obvious reasons. It’s basically a lobster roll but instead of carbs it’s CHEESE!

Make the Cheese Shells

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Place small mounds of shredded cheese on the parchment paper, spreading them out to form circles. Bake for 5-7 minutes, or until the cheese is melted and bubbly. Remove from the oven and let cool slightly. Carefully shape each cheese circle into a taco shell shape using a spatula.

Prepare the Lobster Filling

In a medium bowl, combine the cooked lobster meat, mayonnaise, diced celery, lemon juice, salt, and pepper. Mix until well combined.

Assemble the Tacos

Once the cheese shells have cooled and hold their shape, fill each shell with the lobster mixture. Top with fresh herbs, if desired. Serve immediately.
