Method

Preparation

1

Cutting the Potatoes

Wash and peel the Russet potatoes. Cut them into thin shoestring fries, about 1/8 inch thick.

2

Soaking the Fries

Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Cooking

3

Heating the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

4

Frying the Fries

Drain the soaked fries and pat them dry. Fry the fries in batches for 4-5 minutes, or until golden brown and crispy. Remove and let drain on paper towels.

5

Tossing with Seasoning

While the fries are still hot, toss them with Old Bay seasoning to coat evenly.

Serving

6

Serving the Fries

Serve the fries in a cup or basket with your choice of dipping sauces: curried ketchup and honey Dijonnaise.
