Preparation
Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin shoestring shapes, about 1/4 inch thick. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
Fry the Potatoes
Drain the soaked fries and pat them dry with paper towels. Working in batches, carefully add the fries to the hot oil. Fry for about 3-4 minutes or until golden brown and crispy.
Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. Immediately sprinkle with salt while hot.
Serve
Serve the fries hot with your favorite dipping sauce.
