Preparing the Potatoes

    Peel and Cut Potatoes

    Peel the russet potatoes and cut them into 1-inch cubes. Place them in a bowl of cold water to prevent browning.

    Preheat the Oil

    In a large pot or deep skillet, heat the vegetable oil to 350°F (175°C) over medium heat.

    Fry the Potatoes

    Remove the potatoes from the water and pat them dry with paper towels. Carefully add the potatoes to the hot oil in batches, frying for about 5-7 minutes until they are golden and crispy.

    Drain and Season

    Remove the fried potatoes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt while they are still hot.

Making the Spicy Aioli

    Combine Ingredients

    In a medium bowl, combine mayonnaise, minced garlic, smoked paprika, cayenne pepper, and lemon juice.

    Mix and Adjust Seasoning

    Whisk the mixture until smooth. Taste and add salt as needed to achieve your desired flavor.
