    Cook the Rice

    Rinse the basmati rice under cold water until the water runs clear. In a pot, add 2 cups of water for every cup of rice. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is fluffy and the water is absorbed.

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then add the diced red bell pepper and zucchini, cooking for about 5 minutes until softened.

    Combine Ingredients

    Once the rice is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir in the cherry tomatoes, Kalamata olives, crumbled feta cheese, and chopped parsley. Mix well to combine all the ingredients.

    Drizzle with lemon juice, and season with salt and black pepper to taste. If using, add the toasted pine nuts and fresh basil for extra flavor. Serve warm or at room temperature.
