    Cook the Green Peas

    In a pot of boiling water, add the green peas and cook for about 5 minutes until tender. Drain and set aside.

    Sauté the Aromatics

    In a skillet, heat a tablespoon of oil over medium heat. Add the finely chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

    Mash the Peas

    In a large mixing bowl, combine the cooked green peas and sautéed onion mixture. Mash them together using a fork or a potato masher until well combined but still slightly chunky.

    Combine Ingredients

    To the pea mixture, add chopped cilantro, grated cheese, beaten eggs, all-purpose flour, salt, and black pepper. Mix until everything is well incorporated.

Frying

    Heat the Oil

    In a large frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Form the Croquetas

    Using your hands, shape the pea mixture into small balls or patties, about 1-2 inches in diameter.

    Fry the Croquetas

    Carefully place the formed croquetas into the hot oil. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes on each side until golden brown and crispy.

    Drain and Serve

    Once cooked, remove the croquetas with a slotted spoon and place them onto a paper towel-lined plate to drain excess oil. Serve hot.
