Marinating the Chicken

Prepare the Marinade
In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground paprika, salt, and black pepper. Mix well until fully combined.

Marinate the Chicken
Cut the boneless chicken breast into 1-inch cubes and add them to the marinade. Toss to ensure the chicken pieces are well coated. Cover the bowl and refrigerate for at least 1 hour (or up to overnight for best flavor).

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Preheat the grill to medium-high heat.

Assemble the Kabobs
Thread the marinated chicken, chopped red onion, and bell peppers onto the skewers, alternating between the chicken and vegetables. Leave a little space between each piece for even cooking.

Cook the Rice
In a medium saucepan, bring water to a boil. Add the long-grain rice and salt. Stir once, cover, and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes.
