Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut each sprout in half lengthwise.

Cook the Bacon
In a large skillet, cook the bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon from the skillet and place on paper towels to drain. Leave the bacon fat in the skillet.

Sauté the Brussels Sprouts
In the same skillet with the bacon fat, add the halved Brussels sprouts. Sauté for about 8-10 minutes, stirring occasionally, until they are golden brown and tender.

Add Cream and Cheese
Reduce the heat to low, add the heavy cream, and stir until combined. Gradually add the Manchego cheese while stirring until melted and creamy.

Finish with Truffle Oil
Drizzle the truffle oil over the Brussels sprouts mixture. Crumble the cooked bacon on top and season with salt and black pepper. Stir to mix all ingredients well.
Serving

Plate the Dish
Transfer the Brussels sprouts to a serving dish and serve immediately, garnished with additional Manchego cheese if desired.
