Preheat the Oven
Preheat your oven to 400°F (200°C). This will ensure that the eggplant roasts evenly.

Prepare the Eggplant
Wash the eggplants thoroughly. Cut them in half lengthwise and score the flesh in a crisscross pattern, being careful not to cut through the skin.

Season the Eggplant
In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, and paprika. Brush this mixture generously over the cut sides of the eggplant halves.
Roasting

Place in Oven
Place the eggplant halves, cut-side up, on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25–30 minutes, or until the flesh is tender and golden brown.

Add Balsamic Vinegar
In the last 5 minutes of roasting, drizzle the balsamic vinegar over the eggplants to enhance their flavor.

Once the eggplants are done roasting, remove them from the oven. Sprinkle with fresh parsley before serving. Enjoy warm as a side dish or a main vegetarian option.
