Making the Ravioli Dough

    Prepare the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Preparing the Wild Mushroom Filling

    Sauté the Mushrooms

    In a skillet, heat a bit of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the wild mushrooms, salt, and pepper, cooking until mushrooms are tender, about 5-7 minutes.

    Combine the Filling

    In a bowl, mix the sautéed mushrooms with ricotta cheese, grated Parmesan, and chopped parsley until well combined. Set aside.

Making the Parmesan Truffle Cream Sauce

    Prepare the Sauce

    In a saucepan over medium heat, combine heavy cream and bring to a gentle simmer. Stir in the grated Parmesan until melted and creamy. Add truffle oil, salt, and pepper to taste.

Assembling and Cooking the Ravioli

    Divide the dough into four pieces. Roll each piece out on a floured surface until thin (about 1/16 inch).

    Place small spoonfuls of the mushroom filling about 2 inches apart on one sheet of rolled dough. Moisten the edges with water, then place another sheet of dough over the filling. Press down to seal and cut into squares or circles.
