Roasting the Airline Chicken Breast

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Chicken
Pat the airline chicken breasts dry with paper towels. Rub olive oil all over the chicken, then season with salt, black pepper, garlic powder, and fresh thyme.

Roast the Chicken
Place the seasoned chicken breasts on a baking sheet and roast in the preheated oven for about 25-30 minutes or until the internal temperature reaches 165°F (75°C).
Preparing the Sundried Tomato Creamed Spinach

Sauté the Spinach
In a large skillet over medium heat, add a splash of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the fresh spinach and cook until wilted, about 3-4 minutes.

Add Cream and Cheese
Stir in the heavy cream, chopped sundried tomatoes, salt, and black pepper. Bring to a gentle simmer and cook for about 5 minutes until slightly thickened. Add the grated Parmesan cheese and stir until melted and well combined.
Making Garlic Smashed Potatoes

Boil the Potatoes
In a large pot, add the baby potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook until potatoes are fork-tender, about 15-20 minutes.
