Turkey Preparation

    Roast the Turkey

    Preheat your oven to 350°F (175°C). Rub the turkey breast with olive oil, salt, black pepper, and garlic powder. Place it in a roasting pan and roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (74°C). Let it rest for 10 minutes before slicing.

Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4-inch thick slices. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs and milk, and one with cornmeal.

    Fry the Tomatoes

    Heat the oil in a large skillet over medium-high heat. Dredge each tomato slice in flour, dip in the egg mixture, then coat with cornmeal. Fry the tomato slices in batches for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Chipotle Aioli

    Make the Aioli

    In a bowl, combine mayonnaise, chipotle peppers, and lemon juice. Mix until smooth and well-blended. Adjust seasoning to taste.

Assembly

    Assemble the Sandwich

    Toast the sourdough slices until golden. On one slice, spread a layer of chipotle aioli, add a layer of spring greens, a few slices of roasted turkey, a couple of fried green tomatoes, and crispy bacon. Top with another slice of sourdough and repeat for additional sandwiches.
