Prepare the Chimichurri Sauce
In a bowl, mix together the chopped parsley, chopped cilantro, minced garlic, red wine vinegar, and olive oil. Stir in the red pepper flakes, salt, and black pepper. Adjust seasoning to taste. Let it sit for 15 minutes to allow the flavors to meld.

Assemble the Salad
In a large bowl, combine the diced avocados, thinly sliced radishes, halved cherry tomatoes, and thinly sliced red onion. Drizzle with lime juice and olive oil. Season with salt and black pepper to taste. Toss gently to combine and set aside.

Prepare the Hangar Fries
Preheat your oven to 425°F (220°C). In a large bowl, toss the cut potatoes with olive oil, salt, black pepper, and paprika until evenly coated. Spread the fries in a single layer on a baking sheet. Bake for about 25-30 minutes, flipping halfway through, until golden brown and crispy.
