    Chop Vegetables

    Dice the onion and bell pepper into small pieces for even cooking.

    Beat the Eggs

    In a bowl, crack the eggs and whisk them until well combined. Set aside.

Cooking

    Sauté Vegetables

    In a large non-stick skillet over medium heat, add a splash of oil. Once hot, add the diced onion and bell pepper. Sauté for about 4-5 minutes until they are softened and slightly caramelized.

    Scramble the Eggs

    Pour the beaten eggs into the skillet with the sautéed vegetables. Stir gently with a spatula, cooking until the eggs are just set but still soft, about 3-4 minutes.

    Add Salsa and Cheese

    Stir in the salsa and shredded cheese into the egg mixture, cooking for another minute until the cheese is melted and everything is well combined.

    Warm the Tortillas

    In a separate skillet or microwave, warm the flour tortillas until they are soft and pliable.
