Method

Preparation of Buttermilk Biscuit

    Make the Biscuit Dough

    In a large mixing bowl, whisk together the flour, baking powder, salt, and baking soda. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

    Shape the Biscuits

    Turn the dough onto a floured surface, gently knead it a few times, and then pat it into a 1-inch thick round. Cut out biscuits using a biscuit cutter and place them on a baking sheet.

    Bake the Biscuits

    Preheat your oven to 450°F (230°C). Bake the biscuits for about 12-15 minutes until golden brown.

Preparation of Fried Green Tomatoes

    Prepare the Tomatoes

    Slice the green tomatoes into 1/4-inch thick rounds. In a shallow bowl, combine the flour, cornmeal, salt, and black pepper.

    Breading the Tomatoes

    In another bowl, whisk the egg and milk together. Dip each tomato slice into the egg mixture, then dredge in the flour-cornmeal mixture until well coated.

    Fry the Tomatoes

    Heat oil in a large skillet over medium-high heat. Fry the breaded tomato slices for about 3 minutes on each side or until golden brown. Drain on paper towels.

Poaching the Eggs

    Prepare Poaching Liquid

    Fill a saucepan with water and add vinegar. Bring to a gentle simmer.

    Poach the Eggs

    Crack each egg into a small bowl and gently slide them into the simmering water. Cook for about 3-4 minutes or until the whites are set but the yolks remain runny. Remove with a slotted spoon.

Hollandaise Sauce Preparation

    Melt the Butter

    In a small saucepan, melt the butter over low heat until completely melted. Remove from heat.

    Whisk Egg Yolks and Lemon Juice

    In a heatproof bowl, whisk together the egg yolks and lemon juice.

    Place the bowl over a pot of simmering water (double boiler). Whisk continuously while slowly drizzling the melted butter into the egg yolk mixture until thickened and creamy. Season with salt and cayenne pepper to taste.

Assembly

    On a plate, place a halved biscuit, top with pit ham, a fried green tomato slice, and a poached egg. Drizzle with hollandaise sauce. Serve immediately.
