Method

Filet Mignon

    Prepare the filets

    Season both sides of the filet mignon steaks with salt and black pepper.

    Sear the filets

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the filets and sear for 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from skillet and let rest.

Demi-Glace

    Make the demi-glace

    In the same skillet used for the filets, add diced shallots and sauté for 2-3 minutes until soft. Pour in red wine and scrape the bottom of the skillet to deglaze. Let it simmer for 5 minutes.

    Add beef stock

    Add beef stock and thyme to the skillet. Bring to a boil, then reduce heat and simmer until the sauce has reduced by half, about 15-20 minutes. Stir in butter until melted and smooth.

Mashed Potatoes

    Cook the potatoes

    In a large pot, add cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain.

    Mash the potatoes

    Return the drained potatoes to the pot. Mash with butter, milk, salt, and black pepper until smooth and creamy.

Grilled Onions and Mushrooms

    Sauté onions and mushrooms

    In a separate skillet, heat olive oil over medium heat. Add sliced onions and cook until translucent, about 5 minutes. Add sliced mushrooms, salt, and pepper, and cook for an additional 5-7 minutes until mushrooms are browned.
